Creamy Zucchini Noodles



1/4 C. Pine nuts

1/4 C. Pumpkin seeds

2 T. Nutritional yeast

3 T. Olive oil

1 t. Sunfire Salt (coming soon to Eat Real Food Nutrition)

1 Chopped or sliced red pepper

1/4 C. sesame seeds

3 C. Zucchini noodles Make your own! use this

Here is how to do it!


Boil water for the zucchini while you make the sauce:


In a high speed blender, blend: nuts, seeds, yeast, olive oil and salt until creamy. If you don't have a high speed blender, you may be left with bits of nuts which just adds a bit of texture; it's delicious either way!


When water is boiling, add the zoodles. Turn water off and set timer for three minutes. After three minutes drain the noodles. Use a clean towel to squeeze some water out of the noodles. Don't make yourself crazy trying to wring it all out, it doesn't matter!


Toss the noodles in the sauce. Transfer to serving bowl and decorate with peppers and sesame seeds.
