Rawlicious Chocolate Truffles

Um. These are really superb. 


They've been a hit with any crowd I've shared them with. This weekend, they traveled with me to three Holiday parties and they were gobbled up!


Here are the products I prefer to use and why.





8-10 pitted medjool dates (or a 1x1x2 inch block of date paste)

4 T. cacao powder

3 T. water

1/2 t. Sunfire Salt

1 1/4 C. walnuts

2 T. cacao nibs


In a food processor: blend dates, cacao powder, salt and water until thoroughly mixed. 


Scrape down sides and top of food processor. At this point, your mixture will look like thick brownie batter. 




Add walnuts and pulse until the walnuts are evenly dispersed and chopped. At this point, your mixture will be crumbly but will stick together if you pinch it with your fingers.


Add nibs and pulse until they are evenly dispersed.


Use a small (one inch) ice cream scoop, scoop up mixture and pack it into scoop to form a truffle.


You can also roll truffles with your hands.
