Overnight Chia Pudding
Overnight Chia Breakfast Pudding
1/2 cup chia seeds
3 T. flax seeds
13.5 oz can organic coconut milk (full fat)
2 cups water
¼ C. Vital Proteins Collagen Powder
Pinch himalayan salt
3 t. Cinnamon
1 t. Vanilla extract
3 T. Chopped walnuts
½ C. organic, unsweetened coconut chips
1 C. raspberries
3 T. 100% cacao chocolate chips
In a blender: coconut milk, water, collagen, salt, cinnamon and vanilla. Blend until ingredients are incorporated.
Pour coconut milk mixture into large bowl and add chia and flax seeds. Whisk until milk is soaked into all the seeds and generally not sticking together.
Allow to sit until fully thickened (10-15 minutes).
Pour seed/milk mixture into three to five, pint, wide-mouthed jars.
Add toppings and lid the jars.
These will keep in the refrigerator for 4-5 days.
